Enginy d'Oliva

They call this place l’Enginy
and that is no coincidence.

This is where the sugar mill of Oliva once stood.
It was one of the first to use the power of water.
Before that, many mills relied on animals to move the machinery.

The mill used the **main irrigation canal**, known as the *acequia madre*.
This canal was the principal water channel.
It crossed the town from north to south.

The flowing water turned the millstones.
Millstones are large rotating stones.
These stones crushed the sugar cane.

That is how sugar was produced.
And with it came work and income for many families.

Imagine the constant sound of water.
While the water carried out the hardest work,
the town moved forward and experienced a time of great prosperity.
